You don’t even need extra dressing; the brine from the jar is the perfect vinaigrette!
How to make it:
Start with a bed of fresh arugula or mixed greens.
Add our Pickled Beets & Onions.
Our Favorite Twist: Add sweet corn for a pop of sweetness and feta or goat cheese for creaminess.
Top with walnuts for crunch. Drizzle 2 tablespoons of the brine from the jar over the salad, toss, and serve.
